    Kotleti aka Ground Beef Patties

               Such a simple recipe and believe it or not there are only three ingredients involved! I love that! Makes my mama and wife life that much easier.  The texture of these patties is light and airy.  This is also the healthier version of kotleti because they are baked in the oven.  These go very well with either mashed potatoes or buckwheat.  We hope you give this recipe a try!

The mixing bowl pictured above is the Non-skid mixing bowl by Martha Stewart.  

Ingredients

About 1-1
½ pounds of ground beef (you can always do more if you need to) 

1 large or 2 small potatoes

1 medium sized onion

½ tablespoon of salt

½ teaspoon of black pepper


Bread Crumbs. We use Progresso Garlic & Herb (NOT pictured above).

I used my Kitchen Aid Food Grinder Attachment to grind the beef.  Another great tool to have in the kitchen! I highly recommend it.  After grinding the beef, puree the onion and potatoes. Then, add 1 Tbsp of Bread Crumbs.

Make sure all of the ingredients are fully incorporated.  This is best done with hands rather than a spoon. 

Form patties into ovals.  You can use an ice cream scoop to get even patties.  Put them into a 350 degree preheated oven and let them cook for about 45 minutes or until they are no longer pink on the inside.

Cauliflower Salad

Cauliflower Salad

This is a perfect salad to enjoy in the spring and summer time.  It is easy to make and doesn't require a lot of ingredients which is what we all like.  Hope you try this recipe and let us know what you think in the comments! 



 Ingredients 

2 heads of cauliflower

Dill (we used Safeway's O-Organics)

Cucumber 

Garlic or green onion - whichever you prefer 

Mayonnaise 

Optional: fresh or canned corn 

Chop up the cauliflower into small pieces

Chop up cucumber and mix with the cauliflower.  Next, add in the minced garlic or green onion along with the chopped up dill.  Finish off the salad by incorporating the mayonnaise.

Add additional dill for garnish and it's ready to serve!

Ingredients

Banana

Apple (Any should work, but we used Gala apples)

Pineapple juice 

Peaches (frozen or fresh)
We used Sunrise Growers Peaches

Kale

Spinach

First combine spinach and kale (a small handful of each) with 1½ bottles of Dole Pineapple Juice 

Blend well, then add a banana and blend again. 

After, add 1 full cut up apple and peaches.

We would recommend adding everything little by little. 
You can always blend then taste and see what more you want to add! 

Voila! Your spring drink is ready to be enjoyed.

Easy Crepes aka Blini

Crepes, also known as blini in Russian, are the perfect breakfast/dessert for any occasion! You can serve them with fruits, Nutella, or any other kind of filling.  In the future, we are planning on posting different types of fillings that you may incorporate with this dish.  Crepes go well with a cup of coffee or hot tea!  Why go out for breakfast or brunch when you can make the perfect crepes in the comfort of your own home?!  We hope you enjoy this delicious and easy recipe. 


     


Ingredients:

4 eggs


1⅓ cups milk


2 tablespoons of butter


1 cup all-purpose flour


½ teaspoon salt


 ¼ cup sugar



In a medium bowl, beat eggs slightly.  Add all remaining ingredients and mix well.
After you combine all the ingredients, pour into a mesh strainer to get the clumps out.  

The mixture should look very smooth as pictured above. 

Before making each crepe, add melted butter on the skillet. This brush evenly coats the pan and makes the process easier. 

Flip the crepe when the edges become golden.

Add fruits or a filling if you'd like and enjoy!

                                                                                   Potatoes with Italian Sausage

You guys!!! I am so excited to introduce this recipe.  It went through somewhat of a transformation when we got together to make it.  This dish went from being a simple breakfast potato recipe to a full on meal with Italian sausage that you can make for breakfast, lunch, or dinner. We hope you enjoy it!





Ingredients
2 out of the 3 packs of Aidell's Sausages from Costco (total of 10 sausages used)
(I used the Bacon, Mushroom & Swiss Cheese flavor, but you can use any other flavor you want)

6-8 Russet Potatoes (skin on)

Cooking oil

2 tbsp Oregano

½ tsp McCormick's Paprika

1 tsp McCormick's Italian Seasoning

1 tbsp Organic's Dill

Salt & pepper


Wash and cube the potatoes

Evenly coat the potatoes with the oil and seasonings (salt, pepper, oregano, paprika, and italian).
Cook the potatoes on medium-high until they soften and become crispy on the outside.

Cut the sausage in small rounds and cook them separately until they are cooked through and crispy.

Combine the potatoes and the sausage. Enjoy! :)

Cream Cheese Stuffed Mushrooms

I got this recipe from my sister-in-law.  I had tried these mushrooms at many family events but never thought to ask for the recipe until just recently!  This recipe is super easy and works great as an appetizer.  These mushrooms are sure to please your family's tastebuds!  I hope you enjoy them.

Ingredients

- Mushrooms 
(I buy the baby bella mushrooms from Costco, but you can use any large mushrooms)
- Philadelphia cream cheese (softened)
- Bacon bits 
(I buy the ready bacon bits from Costco - makes it quick and easy - can you tell I love Costco?! :))
-Parmesan cheese
- A little bit of salt & pepper

Preheat the oven to 350 degrees. Gather the ingredients. Prepare the mushrooms by taking out the stalks of each one.

Mix the softened cream cheese, bacon bits, and parmesan cheese together.
Stuff the mushrooms and lay them out on a baking sheet covered with aluminum foil.  Cook the mushrooms for approximately 30 minutes.

Apple Pound Cake (Starbucks copycat recipe)
If you love apples, you will love this apple pound cake! It's perfect with tea or coffee and the best part is it's so simple! 






Ingredients


4 Granny Smith Apples (or any other kind of apple)

1 1/2 cups sugar, divided

1 teaspoon ground cinnamon

2/3 cup butter, softened

2/3 cup milk

1 teaspoon vanilla extract by McCormick 

3 eggs

2 cups flour

1 teaspoon salt

1/2 teaspoon baking powder

Preheat the oven to 400 degrees. Core and dice the apples. Place in a large bowl and coat with 1/4 cup of the sugar add the cinnamon. 


 
I love using my Kitchen Aid mixer, it makes baking that much easier! I creamed together the softened butter and remaining 1 1/4 cups sugar. Blend in the milk and vanilla extract. Add the eggs, one at a time. Beat well after each egg. Mix the dry ingredients together in a medium sized bowl. Slowly add the dry ingredients to the mixer. Mix until combined.  
Spray your pan with nonstick cooking spray or coat with butter.  
Fill each part of the pan halfway full with the batter. Top with the roasted apples over the batter. Bake in the 300 degree oven for 65-75 minutes (or longer depending on the oven).
You can also drizzle warm caramel on top of the apple pound cake which makes it very delicious. Hope you enjoy this recipe!
